Welcome to Eight
Situated in the heart of Baldock, between Hitchin, Letchworth and Royston, Eight is an independent neighbourhood restaurant and bar created by local chef Kish Raheja.
Built around great food, carefully selected ingredients and genuine hospitality, Eight is a place to relax, celebrate and enjoy time together. Whether you're joining us for a romantic dinner, a long Sunday lunch with family, drinks and small plates with friends, or simply a cocktail and a catch-up at the bar, you'll always find a warm welcome and a relaxed atmosphere designed to make every visit memorable.
At Eight, our philosophy is simple: to create a relaxed and welcoming space where great food, thoughtful drinks and genuine hospitality come together.
Every dish is carefully considered, crafted with care and precision using the finest ingredients we can source. Our menus celebrate seasonality and provenance, with a focus on supporting the exceptional producers and suppliers around us.
From the beef and pork we source from trusted local farms, to fresh produce grown in Kish’s allotment less than a mile away, every ingredient has a story. Our seafood is sourced from British waters, with day-boat catches selected whenever possible. This same approach extends to our bar, where you’ll find spirits from local distillers, beers from nearby breweries and coffee roasted just down the road in Weston by Campervan Coffee.
For us, supporting the local community that has supported us from the beginning is at the heart of everything we do.
Our Bar
Our bar is a relaxed and intimate space at the heart of Eight — the perfect place to drop in, unwind and enjoy a drink without needing a dinner reservation.
Whether you’re joining us for a handcrafted cocktail, a locally distilled gin, a glass of wine from our carefully curated list or a perfectly poured pint, our bar offers a welcoming setting for everything from a casual catch-up to an impromptu evening out.
Feeling peckish? Our bar menu is available for walk-in guests, featuring a selection of small plates and snacks created with the same care, quality ingredients and attention to detail as our main restaurant.
Due to its intimate size, the bar operates on a walk-in basis only. We also offer private hire, making it the perfect setting for celebrations, gatherings and special occasions.

Did you know that before opening Eight, Kish was a street food trader? Originally trading under the name Chef at Home, Kish served up delicious dishes at local events using a converted horsebox. It was through these experiences that he realised his lifelong dream of opening his own restaurant.
Eight on Wheels is our mobile catering trailer specialising in Thai food. Why Thai? When Kish first started street food trading, he spoke with local event organisers to find out which cuisines were underrepresented—and Far East Asian flavours topped the list. Having spent time in Thailand, Kish was inspired to bring authentic Thai street food to local events. This also helped him stand out, as there was less competition in that cuisine.
More recently, Kish has expanded his catering menu for private hire events, offering a variety of delicious alternatives like Fish & Chips, Pulled Pork & Loaded Fries and Indian street food—bringing a taste of something special wherever you need it.
