Welcome to Eight, Baldock
Nestled in the heart of Baldock—between Hitchin, Letchworth, and Royston—Eight is an independent neighbourhood restaurant and bar, created by local chef Kish Raheja.
Passionate about all things local, Kish brings his culinary vision to life with hand-picked produce from his allotment, locally sourced meats, and sustainably caught British seafood.
Whether you’re joining us for a quiet dinner, a lively Sunday lunch with family, or cocktails at the bar, you’ll always find a warm welcome and good old-fashioned hospitality with us.
At Eight, our aim is simple: to create a warm, welcoming space where guests can enjoy a truly memorable experience. Every dish we serve is crafted with love, care, and precision, using only the best-quality ingredients we can find.
From the beginning, the support of our local community has been the foundation of our restaurant, and it’s our mission to give back by championing local producers in everything we do.
We source our beef and pork from trusted local farms and hand-pick fresh produce from Kish’s allotment, located less than a mile away. Our seafood comes from British waters, caught by day boats whenever possible. Even our bar reflects our values—with gin, rum, and IPAs from nearby distilleries and breweries and coffee beans are roasted just down the road in Weston by Campervan Coffee.

Our Bar
Our bar may be small, but it’s full of character—cosy, welcoming, and perfect for relaxing with a hand-crafted cocktail, a locally distilled gin, or a glass of wine from our carefully curated list. We now also serve draught beer, adding even more choice for those casual catch-ups or spontaneous evenings out.
Feeling peckish? Our bar menu is available for walk-in guests—featuring delicious small plates and snacks made with the same care and local produce you’ll find in our main restaurant.
Please note, due to its intimate size, the bar operates on a walk-in basis only.
Looking to host something special? You can now hire the bar for private events

Did you know that before opening Eight, Kish was a street food trader? Originally trading under the name Chef at Home, Kish served up delicious dishes at local events using a converted horsebox. It was through these experiences that he realised his lifelong dream of opening his own restaurant.
Eight on Wheels is our mobile catering trailer specialising in Thai food. Why Thai? When Kish first started street food trading, he spoke with local event organisers to find out which cuisines were underrepresented—and Far East Asian flavours topped the list. Having spent time in Thailand, Kish was inspired to bring authentic Thai street food to local events. This also helped him stand out, as there was less competition in that cuisine.
More recently, Kish has expanded his catering menu for private hire events, offering a variety of delicious alternatives like Fish & Chips, Pulled Pork & Loaded Fries and Indian street food—bringing a taste of something special wherever you need it.
